Alternative

When you add in the strawberries and the rhubarb, take a muddler, which can be picked up at any kitchen shop, and use it to smash the fruit till it is bruised and the flavors are released.

To this add a 1/4 cup of simple syrup.

Add in the whiskey, the 2 cups of club soda and ice cubes. Give the cocktail shaker a good shake up and down vigorously for at least 30 minutes. Pour into 2 glasses, enjoy.

Canadian Whiskey is lighter would be a nice choice for a lot of blended drinks.  Choose whiskey by your preference.

Simple Syrup

To make your own simple syrup combine equal parts of sugar and water in a pan.  Bring to a boil and give a good stir to help the sugar melt into the water and leave to cool.  This syrup can be kept in your refrigerator for at least a week or so and used as a sweetener to any iced beverage or cocktail.

Mocktail Suggestions

Instead of whiskey you could use 1/2 cup of fresh squeezed lemon juice and bump up the simple syrup to 1/2 cup.

OR use non alchoholic ginger beer as a refreshing option.
