'Food is universal' — bringing local food to the cafeteria table

On today's show...

The unemployment rate will never reach 0%. That's because of the economy's so-called natural rate of unemployment. Joe Santos, Ph.D., joins us to explain the term "full employment" :(1:10-17:06).

He is the director of the Ness School of Management and Economics at South Dakota State University, where he also leads the Dykhouse program in Money, Banking and Regulation.

We then learn how food can be grown in a South Dakota garden or field, get picked in the morning and end up in a school cafeteria by lunchtime.

Karla Sawvell is the Farm2School coordinator for the Huron School District. She explains how the program got started and which local vegetable the kids go crazy for (17:06-35:35).

Matt Jensen runs the farm to school program in Viborg and its surrounding communities. He talks about sourcing potatoes, expanding its protein program and inviting little chefs into the kitchen (35:35-49:15).

He is a business manager and food service director at the Viborg-Hurley School District.
